Maturation / Production method: Hand-harvest with extreme selection in several passes; after harvesting, the grapes are dried for about 30 days, which concentrates the aromas. Fermentation then takes place in stainless steel tanks, followed by maturation for about 12 months in French barriques and a further six months of bottle aging.
