    The grapes are hand-picked and gently pressed to extract only the best aromas. After the first fermentation in temperature-controlled stainless steel tanks, the second fermentation takes place in the bottle. The wine matures for at least 36 months on the lees, developing its fine, long-lasting perlage and complex aromas. Remuage and disgorgement ensure crystal-clear elegance, while barrel aging is consciously avoided to preserve its fresh and clear profile
