🥂 Grape Varieties & Character
The blend consists of 85% Pinot Nero and 15% Chardonnay. With 4 g/l residual sugar and 12% vol. alcohol, the Rosé Extra Brut is dry, lively, and aromatic. The at least 28 months of yeast aging in the bottle ensures complex aromas, a creamy texture, and fine perlage.
🌿 Production & Technique
The grapes are hand-picked and gently pressed. After the first fermentation in stainless steel tanks, the second fermentation takes place in the bottle (Metodo Classico). The long yeast aging, remuage, and disgorgement guarantee an elegant, lively perlage. A small portion partially ages in barriques, resulting in subtle notes of brioche and vanilla.
