Sparkling wines

  • Introduction

Terms like "Brut," "Extra Dry," or "Demi-Sec" are important categories that describe the sweetness level of a sparkling wine – meaning the proportion of residual sugar remaining in the wine after the second fermentation. These indications play a crucial role in choosing the right sparkling wine, as they significantly influence its taste and character – from extremely dry to distinctly sweet.
  • 1. Zero Dosage / Brut Nature

"Zero Dosage" (also known as "Brut Nature") is the driest category of sparkling wine, with a residual sugar content of 0 to 3 grams per liter. No sugar is added after fermentation. The result is a particularly clear, straightforward, and mineral-driven sparkling wine that highlights the natural characteristics of the grapes. Ideal for connoisseurs and anyone who prefers a puristic, fresh style – for example, with raw seafood or light appetizers.
  • 2. Extra Brut

With a residual sugar content of 0 to 6 grams per liter, the "Extra Brut" also offers a very dry style, but with a little more roundness and balance than Zero Dosage. This sparkling wine combines elegance with freshness and is excellent with fish, seafood, or as an aperitif.
  • 3. Hatch

"Brut" contains between 0 and 12 grams of sugar per liter and is one of the most popular sweetness levels worldwide. The style is fresh, lively, and dry, with notes of green apple, citrus, or white flowers, depending on origin and grape variety. Brut sparkling wines are particularly versatile – ideal as an aperitif, but also with appetizers, fish dishes, or pasta.
  • 4. Extra Dry

Despite its name, "Extra Dry" is not drier than Brut; it contains more residual sugar—between 12 and 17 grams per liter. This category offers a harmonious combination of freshness and fruit sweetness, often with aromas of pear, apple, or tropical fruits. Extra Dry is a very approachable and popular style that pairs well with lightly spiced dishes, Asian cuisine, or fresh salads.
  • 5. Dry (also: Sec)

"Dry" – or "Sec" in French – contains between 17 and 32 grams of sugar per liter and tastes accordingly noticeably sweeter. Typical aromas are those of ripe fruits such as peach, melon, or honey pear. These sparkling wines appear round, soft, and fruit-driven – ideal with Asian dishes, sweet and savory meals, or fruity appetizers.
  • 6. Demi-Sec

"Demi-Sec" is the classic sweet variant for sparkling wines and contains between 32 and 50 grams of sugar per liter. The sweetness is clearly noticeable and is often accompanied by intense aromas such as honey, flower nectar, or candied fruits. Demi-Sec is excellent with desserts, fruit tarts, or creamy sweet dishes, but is also often enjoyed neat as a dessert wine.
  • 7. Mild

"Doux" designates the sweetest category and contains over 50 grams of sugar per liter. This style is quite rare today but is still found in some traditional dessert sparkling wines. Doux sparkling wines offer a syrupy, opulent taste experience with rich aromas of honey, dried fruits, and flowers. Ideal for very sweet desserts or as a special conclusion to a meal.
  • 8. Vintage

Millesimato refers to sparkling wines made from grapes of a single, particularly high-quality vintage. These vintage sparkling wines reflect the climatic characteristics of the respective year and thus offer a particularly distinctive and expressive flavor profile. Millesimato sparkling wines are often complex, elegant, and harmonious – with fine perlage and well-structured acidity. Depending on the vintage, they display nuances of white flowers, citrus fruits, ripe apples, or toasted nuts. Ideal for festive occasions or as a stylish accompaniment to fine dining.

  • Summary

Choosing the right sparkling wine depends entirely on your personal taste and the occasion. If you like it dry and crisp, Zero Dosage, Extra Brut, or Brut are excellent choices. For lovers of fruity freshness, Extra Dry or Dry are suitable. And if you prefer a sweet, soft style, you'll find the perfect taste experience with Demi-Sec or Doux.
